Couscous with dates
Ingredients
- 500g of fine couscous
- 200g of dates Deglet Nour SIDI BOU
- 150 ml of extra virgin olive oil OYYA « DELICATE »
- 1 pinch of cinnamon
Préparation
Rinse the couscous, drain and cook in steam for 15 minutes at the top of a steamer placed over a pot containing boiling water.
Remove the couscous and pour a bowl of water around, separating out the seeds with a spoon before giving it to bake a second time.
Meanwhile, cut the dates into small pieces by reserving some for garnish.
Pour the couscous into a large bowl, add olive oil, SIDI BOU dates, cinnamon and mix well.
Decorate the couscous with halved dates.
Dates and walnut

Ingredients
- 200 g of flour
- 3 eggs
- 150 g of dates “Alligh” EL MONAGUILLO
- 80 g de chopped walnut
- 30 ml of extra virgin olive oil OYYA « DELICATE »
- 150 g of sugar
- 1 baking powder bag
Préparation
In a big bowl, beat with the electric mixer the eggs with the sugar during 8 minutes.
Add little by little the flour, the baking powder, cinnamon, walnuts and olive oil by continuing to beat.
Add Alligh dates cut in small pieces and mix with a spatula.
Cover your mould with olive oil and pour the mixture.
Bake in 180°C during 45 minutes.
Dates bread
Ingrédients
- 250 g of wholemeal flour
- 100 g of white flour
- 15 g of fresh baking powder
- 15 cl of warm water
- 1 pinch of salt
- 30 ml of extra virgin olive oil OYYA
- 50g of Pitted dates "Deglet Nour" SIDI BOU
- 1 pinch of coffee
Préparation
In a bowl, combine the two flours. Add salt, the baking powder and olive oil and mix with your fingertips.
Add warm water and mix until you get a consistent ball. Knead by hand for 10 minutes.
Add cut dates. Cover the dough and let rest for at least 1 hour.
Compose a shape of your choice with the dough.
Dissolve a pinch of coffee in a few drops of olive oil and brush the surface of the dough.
Bake in hot oven, 220° C for 35 to 40 minutes... until the bread gets golden brown color.
Ricotta stuffed

Ingrédients
- 25g of Natural Pitted Dates Deglet Nour SIDI BOU
- 120 g of ricotta
- 50 g of dry fruits secs
- 1 pinch of cinnamon
- 2 tablespoon of honey
Préparation
In a bowl, mix the ricotta, the honey and the cinnamon in order to obtain a soft texture.
Stuff dates SIDI BOU with this preparation.
Decorate the stuffed dates with almonds, walnuts and hazelnuts.
Keep in the refrigerator until the moment to serve.
Serve with a coffee or a tea.
Chicken with dates
Ingredients
- 8 chicken thighs
- 50g of natural pitted dates Deglet Nour SIDI BOU
- 2 onions thinly sliced
- 1 tsp of turmeric
- 1 tsp of ginger
- 1 tsp of cinnamon
- 30ml of extra virgin olive oil "OYYA"
- 2 tbs of whole almonds
- 5 carrots
- 3 potatoes
Préparation
Brown the chicken thighs all over in a tagine or large, wide pan.
Scoop out then add the spices and cook for a few minutes until fragrant.
Add the, onion, almonds, carrots and potatoes and stir. Cook uncovered in the oven for 1 hour - the chicken should be browned and cooked and the sauce reduced.
Add the dates for the last 20 minutes of cooking.
Lamb Tajine
with dates
Ingrédients
- 2Kg boneless lamb shoulder cut into chunks
- 50g of natural pitted dates Deglet Nour SIDI BOU
- 2 onions thinly sliced
- 3 cloves garlic minced
- 1 tsp of turmeric
- 1 tsp of ginger
- 1 tsp of cinnamon
- 30ml of extra virgin olive oil "OYYA"
- 3 tbs of honey
- 1 tbs of sesame
- - salt
- sel
Préparation
Heat olive oil in a large, heavy bottomed pot over medium high heat. Add the lamb, and brown well.
Add onions, garlic and spices to the pot and cook for 5 minutes.
Return the lamb to the pot and stir in the honey.
Bring to the boil, then reduce heat to low, cover and simmer for 2 hours, stirring occasionally, until the meat is tender.
Before serving, decorate with grilled sesame seeds.
Dates cookies
Ingrédients
- 150 g of dates "DEGLET NOUR" EL MONAGUILLO
- 1150 g of flour
- 11 egg
- 180 g of sugar
- 130 ml of extra virgin olive oil OYYA « DELICATE »
- 1 baking powder bag
Préparation
Beat the egg with the sugar during a few minutes.
Add the flour, the baking powder and the olive oil while moving so that the dough becomes very smooth and homogeneous.
Cut dates in small pieces and incorporate them into the dough.
Shape different forms and decorate by placing above dates cut in two.
Place the whole on some greaseproof paper and bake in 190°C during approximately 20 minutes.
